This blog post will be all about Cocoon Coffee in Nijmegen, the Netherlands.

Cocoon Coffee

Cocoon Coffee gives advice, workshops and trainings about coffee and coffee techniques to companies, barista’s and individuals. The professional advice of Cocoon Coffee concerns anything “from water, milk, how to make coffee blends to the correct settings of a coffee machine. “Our knowledge and expertise is very broad and the focus lies on taste and flavour.” Cocoon Coffee is an authorised training company of the SCAE (Specialty Coffee Association of Europe) which makes it possible for coffee aficionados to acquire internationally recognised barista certificates.

The women behind Cocoon Coffee

Cocoon Coffee was founded 6 years ago by Liesbeth and Rose in Nijmegen, one of the oldest cities in the Netherlands. These two driven women have earned their stripes as professional baristas. They met in 2005 as colleagues working for the same bar “de Blonde Pater” in Nijmegen, where they discovered their shared passion for the preparation of good coffee and the urge to learn all about the barista profession.

They started training together to participate in the SCAE Barista and Latte Art Championships. And with success! As they were champions of the Dutch Barista Championships of 2006 and 2007. Together they run Cocoon Coffee and they complement each other in a good way. Rose is good at structuring and planning and Liesbeths strength lies in her creativity. A good team.

The dream of their own personal blend

Liesbeth and Rose have a dream. They want to roast their own coffee singles and blends to surprise their customers with it’s taste. They already have ideas about the taste and flavour of the coffees they want to create and are searching for ways to convert it into reality. About nine months ago they started to experiment with coffee roasting. “In the beginning it was Chinese to us”, said Liesbeth with a smile. “But we really wanted to learn how to do it. We started to follow several courses, trainings and went to the Nordic Roaster Forum. We have learned a lot about coffee roasting but also came to the conclusion: We really need to roast a lot of coffee to gain a lot of experience by doing it ourself.”

Step by step they are working on their dream to discover and invent their own unique taste in the roasting process. A unique taste they are very eager to surprise their customers with. They prefer to work with Biodynamic coffee because they want to support farmers who practise this form of agriculture. So now they are very busy with roasting, blending and fine tuning. In the first half of 2015, Cocoon Coffee will have their coffee on the market and it will be available via their webshop. Of course we wish them good luck!

So why did Liesbeth and Rose of Cocoon Coffee decided to choose a Giesen Coffee Roaster? “The production of a coffee roaster is a real profession, the essence of a good coffee roaster consists of the quality of the production. When we entered the factory of Giesen Coffee Roasters in Ulft, it immediately felt right. Here they work hard, know what they are doing and they stand with both feet firmly on the ground. It is raw, pure and good and yet refinement can be found in the details. Because of their location in the Netherlands the communication lines are short and direct. This also makes it easy for us.”
